The Oysters are shucked during service. According to seasonal availability, the daily oyster selection could be from the oyster fields of South Australia, Tasmania and New South Wales. They offer you only fresh sea food. The sea food tank is stocked daily with the likes of crayfish, scallops, mussels and other marine creatures.

Those who love fleshy food need not despair. Special care is taken of meat eaters. Cuts of succulent prime beef, slow cooked pork or chef Joseph's signature parmesan crusted veal cutlet are a food buff's delight. Oyster Little Bourke also offers a vast variety of wines from around the world, as well as a wide selection of desserts. Open Monday through Friday for lunch and Monday to Saturday for dinner, Oyster also caters to the needs of pre and post theatre diners, by serving dinner from 5pm until late.
